Mervin
Austin has been in the baking trade for more than 30 years.
In 1982, he started his own Bakery in London with a partner.
18 years later the business had grown so much with 15 delivery vans,
150 staff that sitting behind a desk, going from meeting to meeting
and commuting for hours was the daily grind!
Marie-Christine
after years in teaching was at home with their two little boys ready
to go back to work. She was passionate about food, nutrition and
totally committed to buying organic produce.
The
idea started to germinate. Mervin would leave his London business
and with his wife's help would start an Organic Bakery of his own.
After months of scouring the country to find the ideal premises,
they came across Mount Pleasant Windmill
which was for sale.
It
was love at first sight and they purchased the windmill in 2000.
They
immediately set to get the continental wood-fired oven of their
choice all the way from Spain. It was built next to the Tea Rooms,
all 18 tons of it, and TRUE LOAF BAKERY was born. It took more
than
2 weeks to get slowly to baking temperature, but these days the
oven hardly ever goes cold! They burn discarded wood from the
local
estate or from sawmills around, making their breads as ecologically
sound as they are organic.
Today
they bake more than 30 sorts of Organic
Breads all made from their
own Organic Flour stoneground in the windmill as well as all the
cakes for their Tea-Rooms. The Organic Breads are sold in their
shop as well as on local Farmers' Markets. As soon as they find
a Baker with the artisan knowledge and the same sort of dedication
as theirs, they will be baking everyday and offer their organic
breads for sale on line as well as their organic flours.
